Doctor Inevitable's Basic All-purpose Tomato Sauce

 

 

 

29.5 oz. Tomato sauce (no need to scrape the can bone dry)

 

11.7 oz. Tomato paste (ditto)

 

1 Tb Italian seasoning

 

1 Tb Oregano

 

1 tsp Onion Powder

 

1 tsp Garlic Powder

 

½ tsp salt (or none if you are on a salt free diet)

 

 

 

In a small cover-able bowl add all spices. Cover and shake vigorously.(secret#1)

 

In a large saucepan over medium heat, combine tomato sauce and paste.

 

When combined add your spices and mix well.

 

Bring to a boil, always stirring clockwise.(secret#2)

 

At boiling, quickly cover, reduce heat to simmer.

 

Boiling cooking splatters can burn you. (It's no secret)

 

Simmer for 64 minutes and stir every 16 minutes with a wooden spoon while simmering. (secret#3)

 

Set to cool.

 

When cooled, pour into freezer containers, leaving 7/16 inch head-space.(secret#4)

 

Yields about 4 cups.

 

Can be stored frozen for 12 months.

 

 

 

Can be used as pasta sauce. Add your favorite cooked meats while simmering.(secret#5)

 

Can be used as pizza sauce. Add your favorite toppings. (no secret)

 

Can be used as a dip. Add diced tomatoes or whatever while simmering. (secret#6)

 

Can be used as a Hot Sauce if you know how to add the secret ingredients

 

 

 

Doctor Inevitable's secret ingredient for Nuclear Hot Sauce is

 

 

 

Everyone's palette and tolerance levels are different.

 

The secret ingredient can be added in various amounts until you reach a level of heat that suits you.

The secret is to add the Carolina Reaper Powder during the simmering process.

 

Before the second stirring sprinkle the desired amount of powder on top of the simmering sauce and then stir. At the third stirring, taste a little and see what happens. Here is where you decide if it needs more. Add to suit and stir.
